Our Butchery counter has a team of experienced & passionate butchers who combined have over 100 years of experience between them.
We aim, wherever possible to source local meats from within Oxfordshire. Whole carcasses are cut, jointed and trimmed on our butchers block, and our skillful team are happy to take bespoke orders and can cut & finish to any weight.
We pride ourselves on sourcing the very best meat from local British farmers, who share our values of quality, welfare and sustainability. For example, all of our pork comes from our neighbours across the road at Blanchards Farms, our grass fed Lamb and Beef from farmers in Thame and Wild Venison from the Cotswolds.
All of our beef has been hung for at least 21 days to guarantee superb flavour and tenderness, and can be hung for up to 42 days in our dry aging cabinet, creating a truly flavoursome and indulgent cut. We also have a special salt rock dry ager, if you’re looking for something truly special.
From mid-September to February we have a selection of locally reared and shot game, including pheasants, partridge, venison and duck. Game sausages will also complement our huge variety of handmade sausages which are produced each week from over 150 different recipes. With over 80% pork meat content, our sausages really are the best in our field.
From spring lamb, to handmade fresh burgers, we work hard to deliver a full calendar of seasonal meats to our customer, making our butchery counter something we are really proud of. During the summer months, we have an extensive BBQ range to suit everyone.
We also produce a range of products which include; mini Beef Wellingtons, stir fry mixes, convenience, oven ready meals and lots lots more! As well as stocking Rosie & Jim products, including their gluten free chicken range of: Chicken Poppers, Chicken Burgers, Turkey Burgers, Salt & Chilli Shredded Chicken, Chicken Kiev and Chicken Schnitzel. We also have an extensive range of pre-packed items including half & full roast chicken tray bakes, sauasges, meal tray bakes, marinated meats and lots more.
Our butchers work closely with the chefs in the Farmhouse Kitchen to ensure we serve our customers the highest standards of meat.
